Azerbaijan sits on the western shore of the Caspian Sea, between the Caucasus range and the Iranian border. In Baku the walled medieval quarter of Icherisheher and its Maiden Tower stand opposite the glass Flame Towers. Beyond the capital lie mountain districts: Gabala, Sheki with its khan palace, Lahij and its coppersmiths. The cooking centres on pilaf, kebabs and tea with jam.
